Cracker Scallops - cooking recipe

Ingredients
    2 lb. scallops
    freshly ground black pepper
    3 Tbsp. olive oil
    2 Tbsp. finely chopped garlic
    1/2 c. finely diced sun-dried tomatoes in oil
    2 c. crushed Premium saltine crackers
    juice of 1 lemon
    3 Tbsp. chopped parsley
    2 Tbsp. unsalted butter
Preparation
    Dry scallops in paper towels.
    Season with pepper.
    Heat oil in large skillet over medium-high heat until very hot.
    Add scallops, then garlic to skillet.
    Immediately add tomatoes and toss.
    Add crackers, lemon juice, 2 tablespoons of parsley and butter.
    Cook and stir until scallops are cooked through and crackers are browned.
    Garnish with remaining parsley.
    Makes 4 servings.
