Krystal'S Vegetable Chili - cooking recipe

Ingredients
    2 c. chopped zucchini
    1 c. diced carrots
    1 c. chopped celery
    1/2 c. chopped parsley
    1/2 lb. butter or margarine
    1 (16 oz.) can pinto beans
    1 (16 oz.) can tomatoes or 2 c. chopped fresh tomatoes
    1 small can tomato sauce
    1/2 c. chopped green pepper
    1 tsp. sweet basil
    1 tsp. chili powder
    1/4 tsp. cayenne pepper
    salt
Preparation
    Melt butter; saute vegetables until tender.
    Add tomatoes and tomato sauce.
    Add seasonings and simmer slowly for 1/2 hour.
    Add beans and salt to taste; continue to simmer for another 1/2 hour. Serve hot.
    May be topped with grated cheese, if desired.
    Serves 6 hearty appetites.
