Egg Harbor Tomato(Low-Fat) - cooking recipe

Ingredients
    1 medium unpeeled potato, finely diced
    1 celery, chopped
    1 medium onion, chopped
    1 clove garlic, chopped or equivalent
    1/4 c. water
    2 c. tomato juice
    2 c. 1% or skim milk
    1 can condensed tomato soup
    2 Tbsp. parsley flakes
    1/2 tsp. garlic powder
    1/2 tsp. dried thyme, crushed or powder
    1/4 tsp. pepper
Preparation
    Cook potato, onion, celery and garlic in water until tender. Stir in tomato juice, milk, soup, parsley, garlic, thyme and pepper.
    Heat through and serve the next day.
