Chicken Ala Glekas - cooking recipe

Ingredients
    2 1/2 lb. split fryer, in serving pieces
    1/4 c. lemon juice
    1/4 c. olive oil
    1 Tbsp. salt
    1 tsp. pepper
    1 Tbsp. oregano (leaf and ground)
Preparation
    Rinse and clean chicken; dry with paper towels.
    Mix salt, pepper and oregano together.
    Rub seasoning mix on both sides of chicken.
    Place chicken in a roasting pan with the skin up. Sprinkle mix of oil and lemon juice on top of chicken.
    Bake at 400\u00b0 for 25 minutes or until golden brown.
    Turn chicken on other side and add 1/4 cup water; continue baking at 400\u00b0 for another 20 to 25 minutes.
    Serve hot.
