"Greek Style" Stewed Green Beans - cooking recipe

Ingredients
    1/3 c. olive oil
    1 large onion, chopped
    2 cloves garlic, minced
    2 c. chopped canned tomatoes *
    1 Tbsp. fresh mint or 1 tsp. dried mint
    1 Tbsp. chopped parsley
    1 tsp. oregano
    2 lb. fresh green beans
    salt and pepper to taste
Preparation
    In a large saucepan, heat oil; saute onion until transparent. Add garlic and cook 1 minute longer.
    Add tomatoes, parsley, mint and oregano and bring to boil.
    Snip off ends and any strings from beans.
    Add beans to sauce mixture.
    Lower heat; cover and simmer until tender, about 30 minutes.
    Salt and pepper to taste.
    Can be eaten hot or at room temperature.
