Italian Vegetables With Pasta - cooking recipe

Ingredients
    1 medium onion
    3 celery stalks
    2 medium zucchini
    1 small eggplant
    2 green peppers
    3 tomatoes
    3 Tbsp. olive oil or salad oil
    3 Tbsp. grated Parmesan cheese
    1 tsp. salt
Preparation
    Chop onion coarsely; cut the remaining vegetables in one-inch chunks.
    Cook all vegetables together in oil over a moderate heat until the mixture is reduced to one-half the original size. Season with salt and cook slowly for 10 minutes longer.
    Mix in the grated Parmesan cheese.
    Serve hot with your favorite pasta.
