Sweet Potato Cake - cooking recipe
Ingredients

1 1/2 c. cooking oil (Crisco)
2 c. sugar
4 eggs, separated
4 Tbsp. hot water
2 1/2 c. cake flour
3 Tbsp. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. grated raw sweet potatoes
1 c. chopped nuts (walnuts or pecans)
1 tsp. vanilla
Preparation

Combine oil and sugar, beat until smooth.
Add hot water and egg yolks then beat well.
Sift together and add dry ingredients. Stir in potatoes, nuts and vanilla; beat well.
Beat egg whites until stiff and fold into mixture.
Bake in three greased cake pans for 25 to 35 minutes.
Cool and frost.
