Polish Beet Soup - cooking recipe

Ingredients
    1 c. dark red beets (or fresh beets)
    5 Tbsp. vinegar
    2 tsp. salt
    1 lb. spareribs
    1 small onion
    sour or sweet cream to taste (1/4 c. or more)
    1 small bay leaf
Preparation
    Drain beet juice into a glass and add 2 tablespoons vinegar and 1 teaspoon salt.
    Cut beets in thin strips and place in a bowl with 3 tablespoons vinegar and 1 teaspoon salt.
    Set aside.
