Vegetable Fiesta! Con Queso (With Cheese) - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 small onion, cut into wedges
    1 small red, yellow, or green bell pepper, seeded and cubed
    1 container of fresh mushrooms, sliced
    1 zucchini, thin-sliced round
    1 garlic clove, minced
    1 tsp. oregano
    1/2 tsp. black pepper
    1 Tbsp. dry white wine
    1 Tbsp. chicken broth
    6 thin slices Monterey Jack Cheese
    salt to taste
Preparation
    Heat oil over medium to high heat.
    Add onion, bell pepper, mushrooms and zucchini.
    Stir one to two minutes.
    Add garlic and oregano.
    Stir fry one more minute or until crisp-tender.
    Add wine and broth; stir fry a few seconds until evaporated. Add salt to taste.
    Remove pan from heat and place cheese slices on top of the vegetables.
    Cover the pan for about 2 minutes so the warmth of the vegetables will melt the cheese.
