Mom'S Award Winning Meat Loaf - cooking recipe

Ingredients
    1 1/2 lb. chopped meat (beef, turkey, etc.)
    1 beaten egg
    basil to taste
    1/2 c. grated Italian cheese (Romano, Parmesan, etc.)
    garlic
    salt
    3/4 c. bread crumbs
    1 small can tomato sauce
    extra Italian cheese for top
    1 large eggplant, cut up into large cubes (keep skin on), parboiled and cooled
Preparation
    Mix all ingredients, using 1/2 can of tomato sauce.
    Place in an oiled baking dish.
    Cover with remaining tomato sauce and sprinkle with cheese.
    Bake at 350\u00b0 for about 1 1/2 hours.
    Serves 6.
