Pumpkin Muffins - cooking recipe
Ingredients

1 c. pumpkin
2 eggs, beaten
2/3 c. non-fat dry powdered milk
2 tsp. pumpkin spice
1 tsp. cinnamon
6 pkg. sugar substitute
1/2 c. grated carrots
6 Tbsp. flour
4 Tbsp. raisins
1 tsp. baking powder
1 tsp. vanilla
Preparation

Combine all dry ingredients in bowl, add eggs and vanilla, then add pumpkin, raisins and carrots.
Mix well.
Spray 12 muffin tins with non-stick cooking spray.
Put mixture into muffin tin.
Bake at 350 degrees for 15 minutes.
Serves 4.
