Warm Potato Salad(Light And Easy) - cooking recipe
Ingredients

2 c. cubed red potatoes
2 Tbsp. finely chopped purple onion
1 Tbsp. plus 1 tsp. white wine vinegar
1 Tbsp. freeze dried chives
1 tsp. olive oil
1/4 tsp. sugar
1/4 tsp. salt
1/4 tsp. pepper
Preparation

Place potatoes in saucepan.
Add water to cover.
Bring to a boil.
Cover, reduce heat and simmer for 10 minutes, or until potatoes are tender.
Drain.
Place potatoes and onion in a bowl. Combine vinegar and remaining ingredients; stir well.
Add to potato mixture.
Toss gently to coat.
Yields 4 servings.
