Bacon-Cheese Muffins - cooking recipe
Ingredients

1/2 lb. bacon
3/4 c. milk
1/4 c. sugar
4 oz. shredded Cheddar cheese
1 egg, beaten
1 3/4 c. all-purpose flour
1 Tbsp. baking powder
Preparation

In a large skillet cook bacon until crisp.
Drain; keep drippings.
Add enough oil to make 1/3 cup.
In small bowl mix drippings, egg and milk; set aside.
Crumble bacon and set aside. In large bowl combine flour and baking powder.
Make a well in center.
Add drippings and egg mixture all at once to flour mixture, stirring just until moist.
Batter should be lumpy.
Fold in bacon and cheese.
Spoon into greased muffin cups about 3/4 full.
Bake at 400\u00b0 in preheated oven for 15 to 20 minutes or until golden brown.
Remove and cool.
Makes 12 muffins.
