Eggplant And Beef Casserole - cooking recipe

Ingredients
    1 large eggplant
    1/2 c. oil
    1/4 c. minced onion
    1/2 c. chopped green pepper
    1/2 lb. ground beef
    1/2 c. bread crumbs
    2 c. canned tomatoes
    salt and pepper to taste
    2 Tbsp. sugar
    1 c. sharp grated cheese
Preparation
    Saute eggplant (peeled and diced) in oil with onion, green pepper and ground beef for 10 minutes.
    Add tomatoes, salt, pepper and sugar and cook 10 minutes longer.
    Pour into buttered 2-quart casserole.
    Cover with cheese and bread crumbs.
    Bake at 400\u00b0 for 20 minutes.
    Serves 8 to 10 people.
