Green Tomato Relish - cooking recipe

Ingredients
    8 qt. green tomatoes
    6 green peppers
    6 sweet red peppers
    7 large carrots, chopped and cooked separately
    10 onions
    3 stalks celery
    5 c. vinegar
    5 c. sugar
    2 Tbsp. mixed pickling spice
Preparation
    Cut or coarsely grind all vegetables except carrots and put in salt water brine overnight.
    (Bring:
    1/4 cup salt to 1 quart water.)
    Next day, drain brine; add carrots (cooked and chopped). Cook vinegar and spices together.
    Bring to a boil.
    (Pickling spice should be put in cheesecloth.)
    Add vegetables and cook 10 minutes.
    Seal while hot.
