Duchess Soup(1 Gallon) - cooking recipe

Ingredients
    1/2 c. minced onion
    1/2 c. diced celery
    1/2 c. grated carrot
    1/2 c. butter or margarine
    1/2 c. flour
    1 1/2 qt. chicken stock (use homemade or canned consomme, not bouillon)
    salt to taste
    white pepper to taste
    1 tsp. sage
    8 oz. Cheez Whiz
    4 c. milk
Preparation
    Cook vegetables in fat until tender.
    Do not brown.
    Add flour and blend well.
    Add hot chicken stock and seasonings.
    Cook 30 minutes.
    Add cheese and milk.
    Cook just long enough to heat to serving temperature.
    If soup is too thick, add milk.
    Soup can be stored in gallon milk jug and servings heated as needed.
