Sweet Tropical Loaves - cooking recipe

Ingredients

1 pkg. yellow cake mix
8 oz. crushed pineapple (undrained)
1 c. evaporated milk
1/2 tsp. nutmeg
2 eggs
1/2 c. coconut

Preparation

Combine the first 5 ingredients and beat on low speed just until moistened.
Beat on high for 2 minutes.
Stir in coconut. Pour into 2 greased 8 x 4 x 2-inch loaf pans.
Bake at 325\u00b0 for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
Cool 10 minutes before removing from pans to wire rack to cool completely.
