Mushroom And Cheese Omelette - cooking recipe

Ingredients
    2 Tbsp. butter
    1/2 lb. mushrooms, cleaned, trimmed and sliced thin
    1 clove garlic, minced or put through a press
    1/4 tsp. thyme
    1/4 tsp. crushed rosemary
    1 Tbsp. dry white wine
    salt and freshly ground black pepper to taste
    4 eggs, beaten
    1 tsp. milk
    1/2 c. grated Gruyere or Parmesan cheese
    fresh chopped parsley (for garnish)
Preparation
    Heat half the butter in a frying pan and add mushrooms and garlic.
    Cook over moderate heat 5 minutes or until mushrooms begin to soften.
    Add thyme, rosemary and white wine and continue to saute another 5 minutes or until liquid evaporates.
    Season to taste with salt and freshly ground pepper.
    Remove from heat and set aside.
