Bologna - cooking recipe

Ingredients
    30 lb. ground beef
    1 oz. black pepper
    2 tsp. saltpetre
    3 Tbsp. liquid smoke
    1 lb. Morton Tender Quick
    1/2 c. sugar
    2 tsp. garlic powder (can use garlic salt, when powder is not available)
Preparation
    Mix this and grind
    again.
    Work
    in
    4
    quarts
    water. Pack in jars.
    Process quarts
    at
    10 pound pressure for 1 1/2 hours or in hot water bath for 3 hours.
