Breakfast Potato Casserole - cooking recipe
Ingredients

2 lb. potatoes
8 link sausages
6 hard-cooked eggs
1/2 pt. dairy sour cream
1/2 c. milk
1 Tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. chives
Preparation

Cook potatoes in boiling salted water until tender.
Drain and cool slightly.
Peel and slice.
Brown sausages in skillet. Arrange 2/3 of potato slices in bottom of buttered baking dish. Layer eggs over potatoes. Arrange sausage links in center of casserole and place remaining potato slices around edge.
Combine sour cream, milk, flour, salt and pepper.
Pour over casserole. Sprinkle with chives.
Bake at 350\u00b0 for 25 minutes.
Yields 6 to 8 servings.
