Welch Cakes (Picau Ar Y Maen)(With A Touch Of Florida) - cooking recipe
Ingredients

1 tsp. grated orange peel
1 1/4 c. flour
1/8 tsp. salt
1 tsp. baking powder
1 c. sugar
1/8 tsp. nutmeg
1 stick butter or margarine
1 egg
1 tsp. vanilla
1/2 c. currants or raisins
Preparation

Toss together first six ingredients.
Work in butter with pastry blender to resemble coarse bread crumbs.
Add lightly beaten egg and vanilla to dry ingredients along with currants and stir with fork until mixture forms a ball.
Turn dough onto lightly floured surface and knead a few times.
Roll to 1/4 inch thickness and cut with round cutter.
If dough is too soft, refrigerate before cutting.
Heat a nonstick skillet to about 320\u00b0 and bake dough until brown on both sides, about 3 to 5 minutes. Remove cakes to cooling rack and sprinkle with granulated sugar while warm.
