Chicken Cacciatore(Cooking For One Or Two) - cooking recipe

Ingredients
    2 chicken thighs and 1 chicken breast, split
    1 Tbsp. oil
    1 small onion, chopped
    1/2 medium green pepper, sliced thin
    1 small clove garlic, crushed
    1 (8 oz.) can tomatoes, cut up
    2 Tbsp. dry white wine (optional)
    1/2 tsp. salt
    1/2 tsp. oregano
    1 small bay leaf
    fresh ground pepper to taste
Preparation
    In skillet, brown chicken in hot oil.
    Push to one side.
    Add onion, green peppers and garlic.
    Saute until tender.
    Add remaining ingredients.
    Bring to a boil.
    Cover, then simmer 30 to 40 minutes or until chicken is tender.
    Discard bay leaf.
    Makes 2 servings.
    Good with hot cooked rice, cauliflower and mixed green salad.
