Chicken Liver Pate - cooking recipe

Ingredients
    1 lb. chicken livers
    1 large onion, chopped
    2 cloves garlic, chopped
    1/4 c. butter or chicken fat
    1/3 c. beer
    1 tsp. salt
    1/4 tsp. pepper
    1 tsp. sage
    2 Tbsp. capers
    1/2 c. chopped fresh parsley
Preparation
    Wash chicken livers and drain.
    Lightly saute liver, onion and garlic in butter for 5 minutes, stirring frequently.
    Add beer, salt and pepper and simmer, uncovered, for 5 minutes.
    Cool slightly.
    Add remaining ingredients.
    Grind or puree in food mill or blender.
    Pour into individual crocks.
    Refrigerate overnight to blend flavors.
    Serve in crocks. Yield: 3 cups.
