Creamed Spinach - cooking recipe

Ingredients
    1 lb. spinach (fresh, frozen, canned)
    1 Tbsp. butter
    2 tsp. flour
    few grains of pepper
    1/8 tsp. ground nutmeg
    3/4 c. milk
Preparation
    Wash fresh spinach thoroughly.
    Add salt and cook until tender.
    Do not add water.
    Chop fresh spinach very fine.
    Melt butter in a saucepan.
    Blend in a mixture of flour, pepper and nutmeg.
    Heat until mixture bubbles.
    Remove from heat; add milk gradually, stirring constantly.
    Bring to boil; cook 1 to 2 minutes longer.
    Blend spinach into sauce and serve hot.
    Makes 4 servings.
