Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 onion, chopped fine
    1 1/2 c. milk
    2 eggs
    1/4 c. cracker crumbs
    4 Tbsp. butter
    1 can mushroom soup (optional)
    1 heaping Tbsp. Cheez Whiz (optional)
Preparation
    Peel eggplant and cut in pieces the size of thumb.
    Put into 1 1/2 quarts salted boiling water; cook until tender.
    Add finely chopped onion, cracker crumbs and butter while very hot; mix well. Beat up eggs and add milk; turn into eggplant mixture.
    Add mushroom soup and Cheez Whiz (optional).
    Bake in casserole at 350\u00b0 for 1 hour.
