Ingredients

1 c. water
1/2 c. each: finely chopped dates, pitted prunes and raisins
1/2 c. unsalted margarine
2 eggs, beaten
1 tsp. vanilla extract
1 c. flour
1 tsp. baking soda
1/4 tsp. each: salt and ground ginger
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/4 c. chopped walnuts
Preparation

Preheat oven to 350\u00b0.
Lightly coat a 9 x 13-inch pan with vegetable cooking spray.
In a 2-quart saucepan, bring water to boil.
Add dates, prunes and raisins.
Cook over medium-high heat until water has been absorbed by fruit, 3 to 4 minutes.
Remove fruit from heat.
Stir in margarine, eggs and vanilla.
Mix until eggs are well incorporated and margarine is melted.
