Lentil Soup - cooking recipe

Ingredients
    3 c. raw rinsed lentils
    7 c. water or stock
    2 tsp. salt
    2 tsp. minced garlic
    1 chopped red onion
    1 chopped white onion
    2 minced celery stalks
    3 chopped large carrots
    1 1/2 c. chopped tomatoes
    2 Tbsp. dry red wine
    2 Tbsp. lemon juice
    lots of pepper
    ham (optional)
    bacon (optional)
    potatoes (optional)
    scallions (optional)
    oregano (optional)
    basil (optional)
Preparation
    In large pot, simmer lentils, water and salt.
    Cover 3 to 4 hours.
    Add garlic, onion, celery and carrots and simmer another hour.
    About 30 minutes before serving, add tomatoes, wine, lemon juice and black pepper.
    Season to taste.
    Enjoy.
    Serve with bread or rolls.
