Spinach Madelyn - cooking recipe

Ingredients
    2 pkg. frozen spinach, chopped
    4 tsp. real butter
    2 tsp. plain flour
    1 small onion, chopped
    1/2 c. evaporated milk
    1/2 c. veggie liquid from cooked spinach
    1/2 tsp. black pepper
    1/2 tsp. celery salt
    1/2 tsp. garlic salt
    6 oz. roll garlic cheese or 1/2 small Velveeta
    red pepper to taste
    Ritz crackers, crumbled (for top)
Preparation
    Cook spinach according to package (do not add salt). Drain and reserve liquid. Melt butter in saucepan on low heat. Add flour and stir until smooth. Add onion and cook until tender, but not brown. Add evaporated milk and veggie liquid, stirring constantly, and cook until smooth and thick. Add seasonings and cheese which has been cut into small pieces. Stir until melted and combine with spinach. Place in small, buttered casserole dish. Crumble Ritz crackers with butter for topping. Bake at 350\u00b0 for 30 minutes.
