String Bean Creole - cooking recipe
Ingredients

1 qt. canned string beans, drained
6 slices lean bacon
1/3 c. onion, chopped
3 Tbsp. butter
2 c. canned tomatoes
1/3 c. chopped green pepper
1/2 tsp. salt
1/8 tsp. pepper
1 c. American cheese, shredded
1 c. bread crumbs (not spicy)
Preparation

Drain beans; save 1/4 cup of liquid.
Cut bacon into small pieces; fry until almost crisp.
Add beans and reserved liquid to bacon; cook for 10 minutes.
Cook onion and green pepper in butter until tender.
Add tomatoes; cook until sauce is thick.
Season. Combine mixtures and pour into greased baking dish.
Sprinkle with cheese and crumbs.
Bake at 375\u00b0 until cheese is melted and crumbs are brown.
