Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dried red pinto beans
    2 qt. cold water
    1 ham hock or sliced ham
    1/2 lb. hot sausage, sliced thick
    1 bunch green onions, chopped
    2 stalks celery, chopped
    3 medium onions, chopped
    1 green pepper, chopped
    dash of thyme
    4 bay leaves
    cayenne pepper
    salt and pepper
    2 to 3 c. white rice (not instant)
Preparation
    Rinse beans.
    Put in a big heavy 3-quart pot; add water, ham and sausage.
    Cook uncovered.
    Add chopped onion, celery, green pepper, thyme and bay leaves.
    Bring to a boil.
    Reduce heat and cover.
    Stir often.
    Season to taste with hot pepper, salt and black pepper.
    Cook until beans are done.
    Serve over cooked rice.
