Tomato Ketchup - cooking recipe
Ingredients

8 qt. medium ripe tomatoes
1 pt. cider vinegar
2 Tbsp. salt
1 1/2 Tbsp. pepper
2 Tbsp. ground cinnamon
1 1/2 tsp. ground allspice
1 tsp. cayenne pepper
1 c. sugar
Preparation

Cook
tomatoes
until
tender;
strain
through
sieve, getting out
as much pulp as possible.
Add remaining ingredients. Ladle into sterilized jars, allowing 1/2-inch headroom. Seal. Process
in boiling water (old-fashioned water bath) 10 minutes. Makes 6 to 8 pints.
