Unique Red-Eye Gravy - cooking recipe

Ingredients
    2 Tbsp. unsalted butter
    1 lb. smoked ham, diced
    2 Tbsp. flour
    1 c. chicken stock
    1/2 c. Coca-Cola
    1/3 c. brewed strong coffee
    salt and freshly ground pepper
Preparation
    Melt butter in a medium saucepan.
    Add the ham and saute over medium-high heat until browned, about 3 to 4 minutes.
    Reduce heat to low and stir in flour.
    Continue to stir until smooth, bubbly and flour is lightly browned.
    Add chicken stock, Coke and coffee, stirring frequently, until gravy is smooth and thickened (about 8 to 10 minutes).
    Season with salt and pepper.
    Serve immediately.
