Ingredients

2 c. sugar
1 c. water
1/2 tsp. maple flavoring
Preparation

Pit as many sour cherries as you wish to use. This must be done by pinching out the seeds with your fingers as they must have a good shape and not be torn any more than you can help. Put the pitted cherries into a bowl or crock and cover with apple cider vinegar. Cover and let stand for three days. Drain and measure the cherries. Add a cup of sugar for each cup of fruit and allow this mixture to stand for three more days. Be sure to stir it well each day so that the sugar melts completely and permeates the whole thing. Put a half stick of cinnamon into each freshly washed pint jar. Add the sugared fruit and seal. That's all: no cooking or processing of any kind.
