Chili Bean Baked Chicken - cooking recipe

Ingredients
    1 1/2 lb. chicken thighs
    6 slices bacon
    1 1/2 c. long grain rice
    1 c. water
    2 (15 1/2 oz.) cans \"hot\" chili beans
    10 oz. frozen chopped broccoli, thawed
    1 c. shredded pepper Jack cheese
Preparation
    Preheat oven to 350\u00b0.
    Rinse chicken; pat dry.
    Wrap each thigh with 1 bacon slice; secure with toothpick.
    Combine in baking dish rice, water, beans and broccoli.
    Top with chicken.
    Cover with foil; bake 30 minutes.
    Uncover, bake about 20 minutes longer or until chicken is no longer pink when cut into.
    Sprinkle with cheese.
    Let stand 5 minutes, until cheese melts.
    Serves 6.
