Vegetable Corn Muffins - cooking recipe
Ingredients

2 1/2 c. flour
1 1/2 c. yellow corn meal
1/3 c. chopped green pepper (optional)
2 medium carrots, shredded
1/4 c. sugar
2 Tbsp. double-acting baking powder
1 tsp. salt
1/2 c. margarine
2 eggs
2 c. milk
Preparation

Grease pans.
Mix the first 7 ingredients.
Melt margarine or butter.
Stir in eggs and milk.
Combine with flour.
Stir just until flour mixture is moistened.
Quickly pour batter into pan. Bake at 425\u00b0 for 15 to 20 minutes or until golden brown.
