Emergency Rice And Frank Skillet Supper - cooking recipe

Ingredients
    1 (28 oz.) can crushed tomatoes with added puree
    1/2 green bell pepper, chopped
    3/4 lb. beef franks, sliced 1/2 inch thick
    1 1/2 tsp. basil
    2 c. instant rice
    2 Tbsp. grated Parmesan cheese (optional)
    3/4 c. shredded Mozzarella cheese
Preparation
    In a large skillet, combine tomatoes, green pepper, franks and basil.
    Heat to boiling, stirring occasionally.
    Stir in rice. Cover pan and remove from heat.
    Let stand 5 to 10 minutes, until liquid is absorbed and rice is tender.
    Stir with fork to fluff. Stir in Parmesan cheese.
    Sprinkle Mozzarella cheese over top, cover and cook over low heat 5 minutes, or until cheese melts.
