Basque Stew - cooking recipe
Ingredients

1 lb. Polish sausage, sliced in rounds 3/8-inch thick
1/2 c. chopped onion
2 (1 lb.) cans diced tomatoes
4 potatoes (6 c.), pared and sliced
1/4 tsp. pepper
1/4 tsp. oregano
1 c. celery, sliced
2 tsp. chopped celery leaves
1 1/2 c. water
2 beef bouillon cubes
1 bay leaf
1 tsp. salt
1/2 tsp. dried thyme
1/4 tsp. basil
dash of lemon juice
Preparation

In large kettle, brown sausage over medium heat.
Add 2 cans tomatoes, sliced potatoes, celery, celery leaves, water, beef bouillon cubes, bay leaf, salt, thyme, pepper, oregano, basil and lemon juice.
Bring to a boil; reduce heat and simmer, uncovered, 40 minutes or until potatoes are tender.
