Green Tomato Relish - cooking recipe

Ingredients
    10 green tomatoes, ground coarsely
    4 medium onions, chopped
    2 Tbsp. salt
    2 c. white vinegar
    2 c. sugar
    1 sweet red pepper, chopped
    1 green bell pepper, chopped
    1/2 c. chopped celery
    1 Tbsp. mustard seed
    1/2 tsp. turmeric
Preparation
    Combine tomatoes, onions, red and green pepper and celery in a large enamel or stainless steel pan.
    Sprinkle with salt.
    Let stand overnight.
    Drain vegetables and set aside.
    Combine remaining ingredients and boil 15 to 20 minutes.
    Add vegetables to vinegar mixture and return to a boil for an additional 10 to 15 minutes.
    Ladle hot mixture into 6 sterilized pint jars.
    Seal immediately.
    Yield:
    6 pints.
