Apple Ring Pickles - cooking recipe

Ingredients
    2 gal. large cucumber rings (approximately 32)
    2 c. pickling lime
    8 1/2 qt. water
    1 c. vinegar
    1/2 bottle red food coloring
    3 Tbsp. alum
    water to cover
    2 c. vinegar
    2 c. water
    10 c. sugar
    4 to 6 cinnamon sticks
    10 oz. cinnamon berries (candies)
Preparation
    Peel and take out seeds of cucumber rings.
    Mix pickling lime and 8 1/2 quarts of water together.
    Pour over cucumbers and let stand 24 hours.
    Drain off liquid; wash rings.
    Soak in plain water 3 hours; drain.
    Simmer rings in 1 cup vinegar, red food coloring, alum and water to cover for about 2 hours.
    Drain and throw away liquid.
