Black-Eyed Pea Dip - cooking recipe

Ingredients
    1/2 lb. dried black-eyed peas
    2 c. water
    1 1/4 tsp. salt
    1/3 c. diced lean ham
    1/2 tsp. red food coloring
    1 (4 oz.) can green chilies
    1 c. tomato juice
    1/2 c. chopped onion
    1/8 tsp. garlic powder
    4 oz. cheese
    1/4 tsp. hot pepper sauce
Preparation
    Wash peas, cover with water and allow to soak overnight. Drain peas and cover with 2 cups of water in a heavy saucepan. Bring to a boil.
    Lower temperature and cook 30 minutes longer. Add red food coloring.
