Tarragon Shrimp Scampi - cooking recipe

Ingredients
    1/2 c. olive oil
    2 onions, peeled and grated
    4 garlic cloves, peeled and minced
    1 small bunch fresh tarragon, finely chopped
    1/2 tsp. salt
    fresh ground pepper
    32 large shrimp, peeled and deveined
    juice 1 lemon
Preparation
    In skillet, heat olive oil, saute onions and garlic over medium low heat for 3 minutes, add salt, pepper and tarragon. Saute for 1 more minute; do not let brown.
    Remove from heat and let cool. In large bowl, combine shrimp with the sauteed mixture and lemon juice.
    Let rest at room temperature for 30 minutes. Preheat the broiler; line a large broiler pan with aluminum foil. Place shrimp on the pan and spoon the onion mixture on each. Broil approximately 4 or 5 minutes.
    Shrimp will be pink and topping should be brown.
