Snow Pudding - cooking recipe

Ingredients
    1 envelope unflavored gelatin (1 Tbsp.)
    1/4 c. cold water
    1 c. boiling water
    3/4 c. sugar
    1/4 c. lemon juice
    1 Tbsp. grated lemon rind
    2 egg whites
Preparation
    Soften 1 envelope unflavored gelatin in 1/4 cup cold water. Stir in boiling water, sugar, lemon juice and lemon rind.
    Strain and cool, stirring occasionally.
    When it begins to set, beat until frothy.
    Beat in 2 egg whites, stiffly beaten.
    Continue beating until mixture holds its shape.
    Pile in sherbet glasses and chill.
