Speidini - cooking recipe
Ingredients

breakfast steaks, trimmed
thin sliced ham
fresh spinach
chopped mushrooms
diced tomatoes
shredded Provel cheese
basil
garlic
oregano
Preparation

On cutting board, pound steaks into 4 x 8-inch oval.
Lay on top of that 1 slice of thin ham that just reaches the edge of the steak.
Lay on spinach the same, one good size chopped mushroom on top of that, 2 tablespoons of diced tomatoes, 3 heaping tablespoonfuls of cheese and sprinkle with a pinch of basil, garlic and oregano.
Roll all of this together, making sure to keep all the stuffing inside.
When through rolling, it should be tubular shaped, 4
inches or so wide.
Dust with oil, roll in spiced bread crumbs and grill for about 15 minutes.
Also can be baked at 350\u00b0 for 25 to 30 minutes.
Best served with sauteed mushrooms, garlic and white wine.
