Poulet Sauce Supreme(Poached Chicken With Cream Sauce) - cooking recipe
Ingredients

1 (2 1/2 lb.) chicken, trussed
5 c. water or chicken broth
1 bay leaf
1 small onion, stuck with 2 cloves
2 allspice
6 peppercorns
1 large carrot, cut in half widthwise
3 large ribs celery, about 6-inches long
salt to taste
2 sprigs fresh thyme or 1/2 tsp. dried
1 c. rice
3 c. chicken broth
1/4 Tbsp. butter
2 Tbsp. flour
1 c. heavy cream
juice of half lemon
freshly ground pepper to taste
1/8 tsp. nutmeg
pinch of cayenne
Preparation

Place the chicken in a small kettle or large saucepan and add the water, bay leaf, onion with cloves, allspice, carrot, celery, salt, peppercorns and thyme. Bring to the boil and partly cover. Simmer 30 minutes.
