Molded Chicken Loaf - cooking recipe

Ingredients
    2 envelopes gelatin
    2 1/2 c. chicken broth
    4 c. diced chicken
    2 tsp. lemon juice
    2 Tbsp. chopped parsley
    3/4 c. chopped celery
    2 Tbsp. pickle relish (sweet)
    1 c. mayonnaise
    salt and pepper to taste
    1 medium tomato, sliced
    1 medium green pepper, sliced into rings
Preparation
    Soften gelatin in 1/2 cup broth.
    Melt remaining broth; add gelatin and stir until gelatin dissolves.
    Add chicken, salt and pepper.
    Cook until begins to thicken.
    Fold in remaining ingredients.
    Pour into 2-quart mold or loaf pan.
    Chill several hours; slice, serve on lettuce and top with tomato slices and green pepper rings.
