Portuguese Red Bean Soup - cooking recipe

Ingredients
    2 to 3 ham shanks (hocks)
    2 linguica (Portuguese sausage)
    2 soup bones
    2 cans red beans or 2 c. dried red beans, soaked overnight
    2 Tbsp. oil
    1 medium onion, sliced
    3 Tbsp. minced parsley
    2 large potatoes, diced
Preparation
    Boil the ham shanks, sausage and soup bone in enough water to cover.
    When meat is almost done, add beans and cook until done. In a frypan, fry onion and parsley until tender. Add to soup stock.
    Add potatoes and salt to taste.
    Add other vegetables such as cabbage, carrots, etc.
