Ingredients

2 eggs
3 egg whites
1/2 c. (low-fat 2%) milk
1 (12 oz.) can evaporated skim milk
3 Tbsp. sugar
1 tsp. vanilla
1/2 tsp. maple extract
1/2 tsp. ground cinnamon (for garnish)
1/8 tsp. ground nutmeg
1/8 tsp. salt
Preparation

Preheat oven to 250\u00b0.
Blend well all ingredients in a blender.
Pour mixture into baking dish or 4 individual ramekins. Sprinkle generously with cinnamon.
(If using ramekins, place on baking sheet for easier handling.) Place in preheated oven to bake about 1 hour or until set.
May be served warm, at room temperature or cold.
