Tomato Fritters - cooking recipe
Ingredients

1 c. flour
1 tsp. baking powder
1 tsp. sugar
3/4 tsp. salt
2 or 3 basil leaves, snipped
28 oz. can tomatoes, drained, seeded and chopped
1 Tbsp. onion, minced
1 Tbsp. parsley, minced
1 egg, beaten
Preparation

Mix together all of the ingredients, but do not overmix.
Drop by tablespoonfuls into hot fat (3/4-inch of fat at 360\u00b0) and fry until golden, turning once.
Drain on paper towels.
Will keep warm in oven for 2 hours.
These are excellent to serve as a side dish or as appetizers.
