Red Rice - cooking recipe

Ingredients
    2 c. rice, cooked
    2 medium bell peppers
    2 medium onions
    4 strips bacon, fried crisp
    1 can tomatoes
    1 c. tomato sauce
    1/2 tsp. Parmesan cheese
    salt and pepper to taste
Preparation
    Fry bacon and place on paper towel.
    Brown onions and peppers in drippings.
    Add tomatoes, sauce and bacon to the rice.
    Pour in greased casserole.
    Sprinkle top with Parmesan cheese and bake at 325\u00b0 for 30 minutes or until rice is dry enough to separate.
    May add 1 pound cooked shrimp, 1 cup cooked sausage, pork or ham.
