Christiana Campbell'S Tavern Sweet Potato Muffins - cooking recipe

Ingredients
    2/3 c. mashed sweet potatoes
    1/4 c. butter
    1/2 c. sugar
    1 egg
    1 c. flour (all-purpose)
    1/4 tsp. grated lemon peel
    2 tsp. baking powder
    1/2 tsp. soda
    1/2 tsp. salt
    1/2 tsp. cinnamon
    1/4 tsp. nutmeg
    1/2 c. milk
    1/4 c. chopped nuts
    1/4 c. raisins, chopped
Preparation
    Cream butter and sugar.
    Add sweet potatoes.
    Beat in egg and lemon peel.
    Stir in dry ingredients and milk.
    Fold in nuts and raisins.
    Fill tins 3/4 full; sprinkle with cinnamon sugar.
    Bake approximately 20 minutes at 400\u00b0.
    These are nice baked in mini tins, also!
